Potato Fry - Urulakkizhangu Varuval


Ingredients :

Russet Potatos - 2 cubed
Red Chili Powder - 1 tsp
Coriander Powder - 1 tsp
Garlic Powder - 1/4 tsp
Oil - 2 tsp
Mustard - 1/2 tsp
Split Urad dhal - 1 tsp
Salt - to taste
  






Preparation:
Heat oil in a wide nonstick pan. Add mustard seeds, Split Urad dhal and curry leaves.
When the mustard splutters add chopped potatoes, red chili powder, coriander powder, garlic powder and salt.
Mix well and close the pan and let it fry in low flame for 10 minutes stirring occasionally till the potatoes are cooked. Low flame will prevent potatoes from being overcooked/mashed up. Stir for one minute in high flame before taking it off the stove. Serve with Curd Rice.

Fruit n Nuts Kesari With Bulgur


Ingredients:

Bulgur or Wheat Rava :1 cup
Sugar : 2 cup
Milk : 2 cup
Mixed fruits - 2 cans
Ghee/Butter : 1 tbsp
Cardamom : 2 pods
Cashew : 1/4 cup
Raisins : 1/4 cup
Chopped Almonds: 2tsp  


Preparation:

1. Open the can of fruits, filter and discard the syrup. In a non stick pan add the fruits and 1 cup of sugar and bring to boil. Stir till sugar is mixed well with fruits.

2. Take a wide non stick pan and add 1 tsp of butter/ghee and fry Nuts & Raisins. Keep it aside. In the same pan add bulgur and stir on low flame for 2mts, keep aside.

3. Add 2 cups of milk to the same pan and bring to boil along with cardamom. Add roasted bulgur and reduce the flame to low; keep stirring so that no lumps are formed. Cook for 3 mts or till bulgur is cooked well then add rest of the sugar, butter and keep stirring for 2 mts then add the fruits stir well. Close the pan and reduce the flame to low and leave it on the stove for 5mts, then turn off the stove.

4. Take a cake pan (i used a heart shaped one) grease the bottom with butter and spread the Nuts & Raisins all over the pan. Add the cooked contents from the pan and press it with a spatula to form a thick setting. Leave it for 20mts then with a knife make diagonal cuts on kesari.

5. Flip the cake pan upside down on a serving plate/dish. Serve and enjoy!

Cabbage Muthira Thoran / Stir Fried Cabbage - Horse Gram in Coconut



Ingredients:
Cabbage : 2 cups(shredded or finely chopped) 
Muthira : 1 cup (boiled)
Small Red Onions /Shallots : 2 (finely, chopped)
Garlic : 2 pods (crushed)
Cumin Seeds : 1/4 tsp
Green Chillies : 2or to your tolerance level
Grated Coconut : 2 tbsp
Turmeric Powder : a pinch
Mustard Seeds : 1/2 tsp
Curry Leaves : a sprig
Salt to taste
Oil : 2 tsp





Preparation:
Mash cumin seeds, green chilly, garlic & shallots using mortar pestle and keep aside.
Add 2 tbsp of shreaded coconut in mortar pestle and mix it well.
Heat oil in a pan. Add mustard seeds, curry leaves and the mashed ingredients and fry for 1minute. Add cabbage, salt, turmeric powder and mix well. Cover the pan and cook on low heat, stirring occasionally; after 5 minutes add boiled Muthira.
Stir for another minute and finally add the semi-ground coconut from the mortar pestle.
Remove from stove & Serve as side dish with rice.
